In the fashion industry, the launch of a line of high-waisted jeans may flop, but the losses will be to bottom lines and reputations (does anyone look good in high waistlines?). But launch an innovative new food product or open a small café, and there’s a risk that people can get sick. Babies can die. The stakes are life and death.
